Marinade:
8 boneless, skinless chicken thighs
2 Tbs (or 1 packet) taco seasoning
1/2 lime (juiced)
1/4 cup olive oil
1/2 tsp tomato paste (optional)
Cilantro rice:
2 cups white rice
3.5 cups water
2 Tbs butter
2 tsp salt
1/2 lime (juiced)
cilantro (minced)
Salad:
Romaine lettuce, chopped
diced tomato
diced onion
bell pepper (your choice for color/flavor)
canned corn
canned black beans
green onions (scallions), chopped
cilantro
lime juice
light sour cream
Marinate chicken in mixture for 15 minutes or more (up to 3 days)
Cook rice with the water/salt/butter, toss in and mix the lime and cilantro after cooking
Grill chicken over medium heat (can also pan fry) for about 5 minutes per side or until done
After resting a few minutes, slice chicken how you like it
Add some rice to a bowl and top with the chicken and salad toppings of your choice
Finish with a squeeze of lime juice
EDIT: Add a suggested amount of cilantro for rice, probably a tablespoon?
Also, try substituting rice with riced cauliflower?
