½ cup melted butter
½ cup sugar
2 eggs
1 cup banana reduction*
1 tsp vanilla
2 cup flour
1 tsp baking soda
½ tsp salt
½ tsp cinnamon
¼ cup mini chocolate chips
¼ cup pecans
Preheat oven: 350 degrees F
1. In a big bowl, melt butter then whisk sugar until fully combined.
2. Add eggs, one at a time, until fully combined.
3. Whisk in banana reduction and extras (chocolate & nuts)
4. Sift in the remaining dry ingredients and gently fold until just combined.
I used a mini muffin tin with roughly 2 tablespoons of batter per muffin.
Bake for 10 min or until toothpick/knife comes out clean.
