1 lb dry beans (pinto, kidney, red, etc)
1/2 onion, skinned but left intact
2 garlic cloves, peeled and left whole
1/4 tsp baking soda
1 Tbls oil (reduces foaming which can clog the vent)
1. Sort beans on a baking tray and remove any debris such as pebbles or clumps of dirt
2. Rinse the beans in cool water and add to the Instant Pot with the onion, garlic and baking soda
3. Add ~9 cups of cold water (beans should be covered by 3 inches of water)
4. Cook on Manual mode, high temperature for 30 minutes
5. Allow natural pressure release for 30 minutes, then vent
6. Drain beans as desired
The beans are now ready to season and eat, or add to your favorite beans recipe.
Note: Don't try to double this recipe. The water level should not exceed 1/2 full to avoid foam getting into the vent.
