1 Tbs cumin
1 Tbs chili powder
1 Tbs paprika
1 Tbs granulated garlic (or garlic powder)
1 Tbs granulated onion (or onion powder)
1 or 2 Tbs brown sugar (lightly packed)
2 Tbs kosher salt
1 Tbs black pepper
1 tsp cayenne pepper
Whisk together and break up any brown sugar lumps
Makes 2/3 of a cup, which is enough for 2 racks of pork back ribs (maybe 3 if used more lightly)
This is a good basic rub. Make your own modifications as you like. Since this rub contains sugar, keep your smoking temperature 275F or lower. Makes a good bark on pork ribs smoked for 4 hours.
