3 bell peppers of your color choice
1lbs ground turkey/chicken/beef
1 taco seasoning packet
1/2 red onion
2 cloves garlic
2c quinoa/rice/cauliflower rice
1c spinach fresh/frozen (drained)
1 can corn
1 can beans
1 jalapeƱo
1/2c shredded cheese (optional)
Cilantro
1. Halve bell peppers and place in oiled pan
2. Cook rice as directed and set aside
3. Brown meat, adding garlic, onion, tomato, taco seasoning and 1c water when almost cooked through
4. Mix together the rice, meat, corn, and beans, and cilantro then fill your peppers.
5. Bake at 325 until peppers are soft enough to pierce with a fork, top with cheese and bake for 5 more min or until golden and delicious.
6. Let cool and serve with cilantro, or be fancy and add sour cream/plain greek yogurt, cojtija cheese, or queso!
I'll add a picture once I actually make this to see if my expected directions turn out to be true.
