1 unbaked pie shell
3 eggs
1 1/2 cups half & half
1/4 cup finely chopped onion
1/2 lb swiss cheese, shredded
4 strips bacon
1/4 cup flour
1/2 tsp salt
black pepper to taste
Cook bacon strips until not quite crisp, drain and cut into small pieces.
Preheat oven to 350F.
Grease quiche plate or Pyrex pie plate and put in the unbaked pie crust.
In a bowl put the cheese, onion, flour and bacon. Cover with a plate or tight fitting cover and shake to coat the mixture with the flour. Pour into the pie shell.
Use the same bowl (I like to conserve on dirty dishes) and slightly beat the eggs with a whisk. Add the half & half and salt & pepper and whisk some more until frothy.
Pour over the cheese/bacon mix in the pie crust. Bake approximately one hour (or a little less if the crust is brown and the center is no longer liquid). Allow to cool about 15 minutes before cutting.
