Large burrito size flour tortillas
oil for frying
shredded lettuce
shredded cheese
1 lb. lean ground beef
1 Tbsp mild chili powder
1/4 cup finely chopped onion
salsa
sour cream
non-fat refried beans
1 avacado - peeled & mashed
Make guacamole by adding 1 Tbsp onion, 2 Tbsp salsa and 2 Tbsp sour cream to the mashed avacado. Mix well and store in the refrigerator.
Brown the ground beef with the remaining chopped onion and chili powder. Drain off the grease and keep meat warm until ready to serve.
Warm the refried beans in the microwave or oven.
Fry tortillas one at the time in about 1/2 inch of oil until lightly browned on both sides. Drain on paper towels.
Assemble each chalupa on a separate dinner plate by layering refried beans, meat, lettuce and cheese on a fried tortilla. Garnish with sour cream, guacamole and salsa.
